Freezer Friendly Meatloaf

Dairy free and soy free meatloaf that you can make in a muffin tin to cut down on cook time and makes it freezer friendly.

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground turkey
  • 1 cup uncooked rice
  • 1/2 cup tomato sauce
  • 1/2 cup minced onion
  • 2 eggs
  • 2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 400 degrees In a large bowl mix well all ingredients. Spoon mixture into a muffin tin. Level, cover with foil and bake for 20 minutes. Serve now or freeze for later. If you choose to freeze put back into muffin tin and bake at 400 degrees for 20 minutes
