Working Mama Meals || Freezer Friendly Meatloaf

I have decided to embrace being a working mom instead of being mad at where I am in life. Sometimes we are exactly where we are supposed to be, for me that is being a nurse and working in drug and alcohol.

I think that often times we get dissatisfied with where we are because we think we deserve something different or get stuck in the belief that something better is out there. More money, a better partner, a different job, no job, higher pay etc. When we stop fighting with reality and accept our paths we find happiness. In that happiness, we sometimes find the change that was wanted all along but rarely does it happen when we try to force it. 

In the light of trying to accept my working mommy self, I am going to try to have a series of “Working Mama Meals.” These are simple and easy to use recipes for those busy nights you come home from work and don’t know what to cook.   The recipe this week is an American classic. Good old meatloaf. This is my mom’s recipe and it has a couple of different variations. I make it MSPI friendly (dairy and soy free)  so that my daughter can eat it.    I usually just have a side of canned green beans and egg noodles for sides. If you have time you can always do the classic mashed potatoes to go with.

To cut down on cooking time I suggest that you do your meatloaf in a muffin tin. It also helps with portion sizes and helps if you choose to freeze it. The muffin size is perfect for young children like mine. It also is also great to take for lunch the next day! 

Freezer Friendly Meatloaf

Dairy free and soy free meatloaf that you can make in a muffin tin to cut down on cook time and makes it freezer friendly.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground turkey
  • 1 cup uncooked rice
  • 1/2 cup tomato sauce
  • 1/2 cup minced onion
  • 2 eggs
  • 2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 400 degrees In a large bowl mix well all ingredients. Spoon mixture into a muffin tin. Level, cover with foil and bake for 20 minutes. Serve now or freeze for later. If you choose to freeze put back into muffin tin and bake at 400 degrees for 20 minutes
