Hidden Veggie Tacos || Working Mama Meal
It is incredibly difficult for me to get my oldest daughter to get a well-balanced diet. She doesn’t like certain textures and is left eating a pretty limited diet. This is a taco recipe for picky eaters that refuse to eat a vegetable, but I will tell you a secret.
There are veggies in this taco recipe! You can’t actually tell that there is any unless you really look. If you wanted to really try to hide the peppers you could use green peppers, which might hide better than the tricolor peppers that I used. There are so many benefits to eating carrots and peppers. This is also an Aldi friendly taco recipe. Aldi’s is our favorite grocery store, and we do most of our family shopping there. There are some ingredients in recipes that are not there, those things I generally get at Walmart. This taco recipe doesn’t have any of those ingredients! So Aldi away my friends!
Can this taco recipe get any better? It’s simple, easy, quick, and freezer friendly! Why, yes, yes it can! This taco recipe is also free of the top 8 allergens (wheat, egg, soy, dairy, fish, shellfish, nuts, and peanuts). To make these allergen free you must make your own taco seasoning, mine is inspired by this recipe at allrecipes.com. Because this is an allergen free it’s an MSPI recipe free of dairy and soy. Homemade Taco Seasoning
- 3 tbsp chili powder
- 1.5 tbsp cumin
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp sea salt
- 1 tsp black pepper
So let’s get to this awesome taco recipe!
Ingredients
The ingredients for this recipe are super simple. Bell Peppers, shredded carrot, ground turkey, and taco seasoning.
If it seems like my bell peppers are frozen and too big. They are both! I chopped them up smaller to use in this recipe and I often freeze bell peppers and onions to keep them for a long time. Especially do this with just picked local and fresh ingredients.
I use a box grater to shred my carrot. This is an awesome way to hide veggies in anything. Meatballs, meatloaf, bread, even muffins!
These are the peppers after they were chopped more finely. Put the peppers in a sauté pan on med-low heat with 1 tbsp olive oil. Cook for about 5 minutes or until they are semi-translucent.
Next add the carrots, 1 tbsp olive oil, and the ground turkey.
After the meat has browned put in the homemade taco seasoning or pre-made with water.
That’s it! You are done, just break out your taco shells and some Mexican rice for a quick side.
If you want to freeze it, just pop it into a freezer bag, lay it flat, and label it.
If you want to cook it from frozen, thaw it in the refrigerator overnight and warm it back up in a sauté pan over medium heat the next day. This takes all of 5-10 minutes, so it’s super easy to do on a weekday or school night.
This goes great alongside some chips and salsa and a fresh salad mix. Or, you can serve it alongside some rice.

Hidden Veggie Tacos
Ingredients
- 2 tbsp olive oil extra virgin
- 2 tbsp water
- 1 lb ground turkey
- 2 med sized carrots shredded
- 1/2 cup tri-color peppers chopped
- 3 tbsp taco seasoning homemade or pre-made
- 1 package taco shells hard or soft
- toppings of your choice
Instructions
- Add peppers and 1 tbsp olive oil in a skillet pan for 5 minutes on med-low heat.
- Add carrots and another 1 tbsp of olive oil as well as ground turkey.
- Cook until meat is browned. Add homemade taco seasoning or a pre-made packet.
- Along with 2 tbsp water. Serve in taco shells with toppings of your choice.
- Or cool it and put it into a freezer bag.
How to cook from frozen:
- Thaw overnight and heat in a skillet on the stove over med heat until warmed.

It has the same texture. Not quite as much flavor so if you’re making burgers you gotta make sure to season.
